I have a hotel room for Friday-Tuesday for $120/night in a nice hotel about 5 blocks from the convention, and plane tickets for $155.

My total cost is looking like about $750. I'm debating looking for a roommate to decrease that; if I could split the room with someone for the weekend, it would decrease my expenses to more like $450. For a 5 day vacation in a nifty place, that's not bad, nor, honestly, is the $750.

I honestly doubt that I'll find anyone to sleep with or want to sleep with anyone, so that isn't a reason to not get a roommate. On the other hand, I'm a little nervous about finding a roommate who would steal my stuff, which is probably paranoid. If I did find a roommate, it would be a colleague journalist. How likely is it for a fellow professional to steal my stuff? Honestly, opinions on this one are MORE than welcome.

Also, check in is at 3 and check out is at noon, which leaves me some time both days with luggage and nowhere to put it. Will hotels hold your luggage for you in situations like that?

They will usually hold your luggage at the front desk.

Hotels hold luggage for you until you can check in, or after you check out until you can pick it up. I'm certain of the former and a little less certain of the latter.
