no idea how well it works, but there's something called pdftotext on athena, so you can probably find it on the web.(the url in its manpage, www.foolabs.com/xpdf/ , doesn't seem to have pdftotext anymore but i didn't look hard).
Acrobat will let you save out in rtf or possibly text only formats--*if* the file has text in it, and isn't just a tif converted to pdf. Formatting can get odd, however.
Acrobat's text select tool (even in the reader) will let you highlight text, copy it, & paste it elsewhere. The object select tool will let you grab images & paste them elsewhere, so you can grab bits of graphs & such.

You use Mac don't you??? The program you need is the complete Adobe Acrobat... When the Coast Guard sent me my Acrobat, then sent me a windows and a MAC version... Would you mind terribly if I stored my spare CD-ROM of Acrobat at your place??? Purely as a back up, of course ;)
